A partially balanced change-over design experiment involving 192 beef steers, which were initially 14 months old and 415 kg live weight, was carried out to determine the intakes of 136 silages from commercial farms in Northern Ireland. Each silage was offered ad libitum as the sole food to 10 animals, with eight silages offered in each of 17 periods over 2 years. A standard grass hay was offered to 16 animals in each period to enable period effects on intake to be removed. Detailed chemical and biological compositions of the silages were also determined. The ranges for pH and dry matter (DM), crude protein, ammonia-nitrogen and apparent digestible organic matter (in vivo) concentrations in the silages and silage dry DM intakes were 3·50 to 5·49 (s.d. 0·396); 155 to 413 (s.d. 43·1) g/kg; 79 to 212 (s.d. 24·4) g/kg DM; 45 to 384 (s.d. 63·2) g/kg total nitrogen; 528 to 769 (s.d. 58) g/kg DM and 4·3 to 10·9 (s.d. 1·13) kg/day respectively. Relationships between intake and individual parameters or groups of parameters have been developed using simple and multiple linear regression analysis and partial least-squares analyses. Silage intake was closely related to factors which influence the extent of digestion and rate of passage of the material through the animal, as indicated by the strong relationships (R2 of regressions = 0·28 to 0·50) with in vivo apparent digestibility and rumen degradability and the concentrations of the fibre and nitrogen factors. Intake was poorly correlated with factors such as pH, total acidity, buffering capacity and the concentrations of lactic, acetic and butyric acids (R2 of regressions = zero to 0·11). Near infrared reflectance spectrometry (NIRS) provided the best fit relationship with intake (R2 of relationship = 0·90). The results also indicate that the intake potential of silages can be directly predicted with a high degree of accuracy from the NIRS of both dried and undried samples of silage, provided the appropriate sample preparation and scanning methods are used.

Lameness is one of the most important dairy cow welfare issues and has inspired a growing body of literature on gait assessment. Validation studies have shown that several methods of gait assessment are able to successfully distinguish cows with and without painful pathologies. While subjective methods provide an immediate, on-site assessment and require no technical equipment, they show variation in observer reliability. On the other hand, objective methods of gait assessment provide accurate and reliable data, but typically require sophisticated technology, limiting their use on farms. In this critical review, we evaluate gait assessment methods, discuss the reliability and validity of measures used to date, and point to areas where new research is needed. We show how gait can be affected by hoof and leg pathologies, treatment of these ailments and the pain associated with lameness. We also discuss how cow (e.g. conformation, size and udder fill) and environmental features (e.g. flooring) contribute to variation in the way cows walk. An understanding of all these factors is important to avoid misclassifying of cows and confounding comparisons between herds.

Scottish Blackface lamb viability records at birth, and postnatal survival from 1 day to 14 days, from 15 days to 120 days and from 121 days to 180 days were used to determine influential factors and to estimate variance components of lamb survival traits. The binary trait viability at birth was analysed using a linear model whereas the postnatal survival traits were analysed as continuous traits using a Weibull model. The data consisted of about 15 000 survival records of lambs born from 1996 to 2005 on two farms in Scotland. The models included fixed factors that had significant effects and random direct and maternal additive genetic effects and maternal litter effects for viability at birth, and sire and maternal litter effects for the postnatal survival traits. The possible effect of maternal behaviour measured around lambing on lamb survival was investigated in separate analyses. Male lambs were found to be at a higher risk of mortality than females during all periods considered. The effect of type of birth and age of dam was more important during the preweaning period than at later ages. The postnatal hazard rate was not significantly affected by the behaviour score of the dams. The genetic merit of dams had more influence on viability at birth than the genetic merit of lambs themselves. Estimates of heritability for postnatal survival traits were in the range of 0.18 to 0.33 and were significantly greater than zero. These results indicate that lamb survival can be improved through farm management practices and genetic selection. Both animal and maternal genetic effects should be considered in breeding programmes for improving viability at birth.

Meta-analytical approach was used to quantitatively synthesize the effect of immunocastration on growth, carcass, meat quality, reproductive organs and boar taint compounds. Altogether, 41 papers were collected for effect size (θ) calculation and the comparisons were made with entire males (EM) and surgical castrates (SC). The data for reproductive organs and growth performance are numerous enough to draw firm conclusions. In contrast, data for carcass and meat quality are more limited. Results of meta-analysis show efficient immunocastration with the magnitude of the response being by far the largest for reproductive organs (θ = −2.8 to −5.0) and boar taint substances (θ = −2.8 and −0.8 for androstenone and skatole, respectively). However, compared with SC, the immunocastrates exhibit larger bulbourethral glands (θ = 1.3) and slightly higher concentrations of androstenone and skatole (θ = 0.1 and θ = 0.2, respectively). The impact of immunocastration is also remarkable on performance, where the main advantage of the immunocastrates is their boar-like performance until revaccination. In the period following the second vaccination, they eat much more than EM (θ = 2.1), resulting in large effect size for growth rate compared with both EM and SC (θ = 1.1 and θ = 1.4, respectively). Considering the whole fattening period, their feed conversion ratio is higher compared with EM (θ = 0.6) and much lower than that of SC (θ = −1.3), although exhibiting moderately faster growth compared with both (θ = 0.6 and θ = 0.2, respectively). With regard to carcass quality, the immunocastrates take intermediate position between EM and SC. Besides, our analysis suggests no difference in meat quality with SC and some meat quality advantages of immunocastrates over EM because of higher intramuscular fat content (θ = 0.4) and lower shear force (θ = −0.6).

The increasing demand for efficiency in pork production requires great specialization of all sectors involved in this activity. In this context, the development of strategies that could reduce undesirable traits related with negative effects on piglet survival and postnatal growth and development are essential for the pig industry. Currently, special attention is given to variation in birth weight, as some evidences suggest an increased within-litter birth weight variation in modern sows. This variation has been shown to be associated with preweaning mortality, variable weights at weaning and deteriorated growth performance, which results in economic losses and lower efficiency. Therefore, understanding the factors that can influence the events that occur during gestation and that have an impact on the fetal growth and development are important to achieve better efficiency and also to develop strategies that can be used to achieve increased within-litter uniformity of piglet birth weight. This study concludes that even at a given placental size, fetal growth may vary because of differences in placental vascularization and efficiency. Feeding extra feed or energy during late gestation only marginally improves birth weight, and positive effects are not consistent between different studies. The detrimental effects of protein restriction on fetal growth during early gestation may be due to altered placental and endometrial angiogenesis and growth, which leads to a reduction in placental-fetal blood flow, nutrient supply from mother to the fetuses and ultimately to fetal growth retardation. The number of studies that attempted to influence within-litter birth weight variation by means of sow nutrition during gestation is limited. Therefore, more research concerning sow nutrition during gestation associated with the provision of balanced diets to meet requirements of the sows and fetuses are still required. This knowledge may subsequently provide starting points for the design of nutritional strategies that can influence within-litter birth variation.

Hyperketonemia (HYK) is one of the most frequent and costly metabolic disorders in high-producing dairy cows and its diagnosis is based on β-hydroxybutyrate (BHB) concentration in blood. In the last 10 years, the number of papers that have dealt with the impact of elevated BHB levels in dairy cattle has increased. Therefore, this paper reviewed the recent literature on BHB concentration in blood and milk, and its relationships with dairy cow health and performance, and farm profitability. Most studies applied the threshold of 1.2 mmol/l of BHB concentration in blood to indicate HYK; several authors considered BHB concentrations between 1.2 and 2.9 mmol/l as subclinical ketosis, and values ⩾3.0 mmol/l as clinical ketosis. Results on HYK frequency (prevalence and incidence) and cow performance varied according to parity and days in milk, being greater in multiparous than in primiparous cows, and in the first 2 weeks of lactation than in later stages. Hyperketonemia has been associated with greater milk fat content, fat-to-protein ratio and energy-corrected milk, and lower protein and urea nitrogen in milk. The relationships with milk yield and somatic cell count are still controversial. In general, HYK impairs health of dairy cows by increasing the risk of the onset of other early lactation diseases, and it negatively affects reproductive performance. The economic cost of HYK is mainly due to impaired reproductive performance and milk loss. From a genetic point of view, results from the literature suggested the feasibility of selecting cows with low susceptibility to HYK. The present review highlights that milk is the most promising matrix to identify HYK, because it is easy to sample and allows a complete screening of the herd through BHB concentration predicted using mid-IR spectroscopy during routine milk recording. Further research is needed to validate accurate and convenient methods to discriminate between cows in risk of HYK and healthy animals in field conditions and to support farmers to achieve an early detection and minimise the economic losses.

Finding insect meals as alternative sources of poultry feedstuffs is a recent research topic; therefore, the present study aimed to evaluate the effects of defatted black soldier fly (Hermetia illucens L., HI) larvae meal in broiler chicken diets on the carcass characteristics and meat quality parameters, proximate composition, fatty acid profile and the heavy metal content of the breast meat. Four dietary treatments were designed: a control diet (HI0) and three experimental diets (HI5, HI10 and HI15), corresponding to 50, 100 and 150 g/kg HI inclusion levels, respectively. The inclusion of 50, 100 and 150 g HI meal per kg feed supply 16.56%, 33.01% and 49.63% of required crude protein. The broilers were slaughtered at day 35, the carcasses were weighed and the breast muscles were excised from 16 birds per each feeding group (two birds per replicate pens) and used for meat quality evaluation. Linear and quadratic responses were observed, for increasing HI meal levels, in the live and carcass weights (maximum for HI10). As far as the colour of the breast meat is concerned, redness (a*) showed a linear response, while yellowness (b*) linearly decreased with increasing HI meal levels (minimum for HI15). As the HI larvae meal increased in the diets, the moisture content linearly decreased and the protein content increased. The total saturated fatty acid and total monounsaturated fatty acid proportions rose to the detriment of the polyunsaturated fatty acid fraction. The HI larvae meal, used in the current study, represents a valuable protein source for broiler chickens when included by up to 100 g/kg in their diets, as an improved slaughtering performance was observed without any detrimental effects on meat quality parameters or heavy metal residues in the meat.

Digitalisation is an integral part of modern agriculture. Several digital technologies are available for different animal species and form the basis for precision livestock farming. However, there is a lack of clarity as to which digital technologies are currently used in agricultural practice. Thus, this work aims to present for the first time the status quo in Swiss livestock farming as an example of a highly developed, small-scale and diverse structured agriculture. In this context, the article focuses on the adoption of electronic sensors and measuring devices, electronic controls and electronic data-processing options and the usage of robotics in ruminant farming, namely, for dairy cattle, dairy goats, suckler cows, beef cattle and meat-sheep. Furthermore, the use of electronic ear tags for pigs and the smartphone usage for barn monitoring on poultry farms was assessed. To better understand the adoption process, farm and farmer’s characteristics associated with the adoption of (1) implemented and (2) new digital technologies in ruminant farming were assessed using regression analyses, which is classified at a 10% adoption hurdle. The results showed clear differences in the adoption rates between different agricultural enterprises, with both types of digital technologies tending to be used the most in dairy farming. Easy-to-use sensors and measuring devices such as those integrated in the milking parlour were more widespread than data processing technologies such as those used for disease detection. The husbandry system further determined the use of digital technologies, with the result that farmers with tie stall barns were less likely to use digital technologies than farmers with loose housing systems. Additional studies of farmers’ determinants and prospects of implementation can help identify barriers in the adoption of digital technologies.

The aim of the present study was to identify relations between stereotyped behaviours (cribbing, weaving and box-walking) and wood-chewing in thoroughbred flat-racing horses (TB) and standardbred trotters and the different management, feeding and training factors to which these horses are exposed. This was obtained by inquiries to all the professional trainers of TB and trottinghorses used for racing in Sweden. The usable response rates were 61% for trotters and 72% for TB representing 4597 trotters from 234 stables and 644 TB from 38 stables. A small field study was carried out to control the validity of the main study which gave results similar to those in the main study. There was a large difference between the two horse categories in the occurrence of behavioural disturbances. The TB had significantly more stereotypies than the trotters (P < 0·001) but there were no differences in the occurrence of wood-chewing. There were several differences in external factors between the horse categories, e.g. trotters had more opportunities for social contacts with other horses, they also had more free time outside the stable and they were trained a shorter time per week than the TB. The TB were given larger amounts of concentrate than the trotters. Wood-chewing within each horse category was explained by the amount of roughage (P < 0·05 in trotters and P < 0·001 in TB) together with other factors. Stereotypies in the TB were explained by: amount of concentrate (positive relation), number of horses per trainer (positive relation) and amount of roughage (negative relation).

Up to half of dairy cows are affected by at least one of metritis, purulent vaginal discharge, endometritis or cervicitis in the postpartum period. These conditions result from inadequate immune response to bacterial infection (failure to clear pathogenic bacteria from the uterus) or persistent inflammation that impairs rather than enhances reproductive function. The degree of mobilization of fat and how effectively it is used as a metabolic fuel is well recognized as a risk factor for metabolic and infectious disease. Release of non-esterified fatty acids has direct effects on liver and immune function but also produces pro-inflammatory cytokines (tumor necrosis factor α and interleukin-6), which contribute to systemic inflammation and to insulin resistance. Therefore, reproductive tract inflammatory disease may be a function of both local and systemic inflammatory stimuli and regulation as well as regulation of fat metabolism. Better understanding of variables associated with insulin resistance and inflammatory regulation in the liver and adipose tissue may lead to improvement of reproductive tract health. This paper reviews factors that may contribute to postpartum reproductive tract inflammatory diseases in dairy cows and their inter-relationships, impacts and treatment.

In the perspective of improving the sustainability of meat production, insects have been rapidly emerging as innovative feed ingredient for some livestock species, including poultry. However, at present, there is still limited knowledge regarding the quality and sensory traits of the derived meat. Therefore, the present study tested the effect of a partial substitution of soya bean meal and oil with defatted black soldier fly (Hermetia illucens) larvae meal (H) in the diet for growing broiler quails (Coturnix coturnix japonica) on meat proximate composition, cholesterol, amino acid and mineral contents, fatty acid profile, oxidative status and sensory characteristics. To this purpose, three dietary treatments were designed: a control diet (C) and two diets (H1 and H2) corresponding to 10% and 15% H inclusion levels, respectively, were fed to growing quails from 10 to 28 days of age. At 28 days of age, quails were slaughtered and breast meat was used for meat quality evaluations. Meat proximate composition, cholesterol content and oxidative status remained unaffected by H supplementation as well as its sensory characteristics and off-flavours perception. Differently, with increasing the dietary H inclusion, the total saturated fatty acid and total monounsaturated fatty acid proportions raised to the detriment of the polyunsaturated fatty acid fraction thus lowering the healthiness of the breast meat. The H2 diet increased the contents of aspartic acid, glutamic acid, alanine, serine, tyrosine and threonine thus further enhancing the biological value of the meat protein. As a direct result of the dietary content of Ca and P, the meat of quails fed with the highest H level, displayed the highest Ca and the lowest P values. Therefore, meat quality evaluations confirmed H to be a promising insect protein source for quails. The only potential drawback from feeding H to broiler quails regarded the fatty acid profile of the meat, therefore requiring further research efforts to understand to what extent the fatty acid profile of H can be improved.

In light of increasing global protein prices and with the need to reduce environmental impact of contemporary systems of milk production, the current review seeks to assess the feasibility of reducing levels of dietary CP in dairy cow diets. At CP levels between 140 and 220 g/kg DM there is a strong positive relationship between CP concentration and dry matter intake (DMI). However, such effects are modest and reductions in DMI when dietary CP is below 180 g/kg DM can be at least partially offset by improving the digestibility and amino acid profile of the undegradable protein (UDP) component of the diet or by increasing rumen fermentable energy. Level and balance of intestinally absorbable amino acids, in particular methionine and lysine, may become limiting at lower CP concentrations. In general the amino acid composition of microbial protein is superior to that of UDP, so that dietary strategies that aim to promote microbial protein synthesis in the rumen may go some way to correcting for amino acid imbalances in low CP diets. For example, reducing the level of NDF, while increasing the proportion of starch, can lead to improvements in nitrogen (N) utilisation as great as that achieved by reducing dietary CP to below 150 g/kg. A systematic review and meta-analysis of responses to rumen protected forms of methionine and lysine was conducted for early/mid lactation cows fed diets containing ⩽150 g CP/kg DM. This analysis revealed a small but significant (P=0.002) increase in milk protein yield when cows were supplemented with these rumen protected amino acids. Variation in milk and milk protein yield responses between studies was not random but due to differences in diet composition between studies. Cows fed low CP diets can respond to supplemental methionine and lysine so long as DMI is not limiting, metabolisable protein (MP) is not grossly deficient and other amino acids such as histidine and leucine do not become rate limiting. Whereas excess dietary protein can impair reproduction and can contribute to lameness, there is no evidence to indicate that reducing dietary CP levels to around 140 to 150 g CP/kg DM will have any detrimental effect on either cow fertility or health. Contemporary models that estimate MP requirements of dairy cows may require refinement and further validation in order to predict responses with low CP diets.

The quality of grilled steaks was assessed by experienced panellists in longissimus thoracis (LT), semitendinosus (St) and triceps brachii (TB) muscles of Aubrac, Charolais, Limousin and Salers breeds raised in two production systems: 15-, 19- and 24-month-old bulls and 4-, 6- and 8-year-old cull cows.

Scores for sensory ‘initial tenderness’, ‘overall tenderness’, ‘juiciness’, ‘residue after mastication’ and ‘flavour intensity’ for all 497 meats were pooled to derive three eating quality classes.

Meats from the bulls and cows and from the four breeds were evenly distributed among the three eating quality classes. The highest quality class, representing one third of all the meats, contained 45% of the LT, 35% of the TB and 21% of the St muscles and one third of the meats from the 8-year-old cull cows. The meats in this class tended to have finer fibres, a greater proportion of slow oxidative fibres, slower post-mortem glycolysis, lower connective tissue and higher fat contents than those in the lower classes.

Lipid content accounted for proportionately 0·56 of the variation in flavour intensity and pH at 3 h post mortem, 0·52 of the variation in tenderness due to muscle and slaughter age.

Considering both young bulls and cull cows together, tenderness was highest in the meats from 15-month-old bulls and low in the meats from the intermediate age groups, and flavour and juiciness was highest in the meats from the oldest animals from each production system.

An experiment was conducted to investigate the influence of the main cereal (cooked maize or cooked rice) and the inclusion of cooked and expanded oat hulls (0, 20 or 40 g/kg) in the diet on total tract apparent nutrient digestibility (TTAD) and productive performance of piglets weaned at 21 days. Each of the six treatments was replicated eight times (five piglets penned together) and the trial lasted for 33 days. From 21 to 41 days of age piglets were given their respective experimental complex diets that contained 530 g/kg cooked cereal and from 41 to 54 days they received a common starter diet based on maize, barley and soya-bean meal. Growth promoters were not included in the diets. The TTAD was determined at 27 and 37 days of age and pig performance was measured at 31, 41 and 54 days of age. Nutrient digestibility increased with age ( P<0·001) and in general were higher for rice- than for maize-based diets ( P<0·001 for dry matter, organic matter and gross energy and P<0·05 for ether extract). From 21 to 41 days of age piglets given rice had higher food intake (FI, P<0·05) and average daily gain (ADG, P<0·01) than piglets given maize but food conversion ratio was not affected. The differences observed were maintained until the end of the trial. The inclusion of oat hulls in the diet did not affect TTAD of the nutrients but tended to reduce the incidence of diarrhoea from 21 to 41 days of age ( P<0·1). Oat hulls inclusion reduced FI and ADG in diets based on maize but had the opposite effect in diets based on rice, indicating that piglets might have a minimum requirement for dietary fibre. It is concluded that cooked rice is an ingredient of choice in pre-starter diets for weanling pigs. Also, the inclusion of moderate levels of fibre as oat hulls reduces the incidence of diarrhoea and might improve productive performance in low fibre diets.

This study reviews the factors of pig production that impact the quality of dry-cured ham. When processing is standardized, the quality of the final dry-cured product is primarily determined by the quality of the meat before curing (green ham). This has been defined as the aptitude for seasoning and is determined by the green ham weight, adipose tissue quantity and quality, meat physico-chemical properties and the absence of visual defects. Various ante-mortem factors including pig age and weight, genetic type, diet, feeding strategy and slaughter conditions determine green ham properties such as the dynamics of water loss, salt intake and, as a consequence, proteolysis and lipolysis. Muscle conditions (pH, salt concentration, water content and availability, temperature) influence enzymatic activity and development of characteristic texture and flavor. Generally, hams of older and heavier pigs present better seasoning aptitude because of higher adiposity. Adiposity is also positively correlated with fat saturation, which is desired to avoid rancidity and oiliness. The fatty acid profile of tissue lipids can be manipulated by diet composition. Feeding strategy affects tissue accretion and protein turnover, thus directly impacting proteolysis. With respect to the impact of pig genotype on dry-cured ham quality, local breeds are generally considered more suitable for producing quality dry hams; however, the majority of dry-cured hams on the market today are from modern pig breeds raised in conventional systems, providing lean hams. The importance of all these factors of pig production is discussed and synthesized, with an emphasis on the main difficulties encountered in dry-cured ham production.

Changes in body composition of 54, second to fourth parity, autumn-calving Holstein-Friesian dairy cows offered grass silage ad libitum and 3(L), 6(M) or 9(H) kg concentrate dry matter per day were measured by serial slaughter at 0, 2, 5, 8, 11, 14, 19, 24 and 29 weeks post partum.

Concentrate level had a significant effect on the fresh weights of many of the body fractions with the differences generally being greater between L and M than between M and H. Increasing concentrate level generally reduced the extent of weight loss of body fractions in early lactation and enhanced subsequent repletion. Empty body weight decreased to week 8 and then increased steadily over the remaining 21 weeks, but within this pattern different organs were concomitantly increasing and decreasing. Carcass weight and the weights of the internal fat depots showed a decline over the first 8 weeks and a subsequent increase, udder weight declined throughout, weights of various sections of the digestive tract showed an initial increase then remained steady, whilst liver weight increased throughout.

In week 0 the carcass accounted for proportionately 0-61 of the total energy in the body (6278 MJ), of which fat and crude protein (CP) comprised proportionately 0·67 and 0·33, respectively. In early lactation mobilization of fat and CP in the carcass was reduced with increasing level of concentrate. In the non-carcass fraction increasing concentrate level led to a higher weight of CP in the metabolically active organs such as the digestive tract and udder but had little effect on the weight of fat. Nevertheless, there was generally a positive effect of concentrate level on energy content. Total weights of fat, CP and water in the body declined to week 8 then increased over the following 21 weeks. Although weight of CP in the liver increased throughout lactation and weight of fat was elevated in weeks 0 and 2, the energy content of the liver remained fairly constant.

Estimates of the change in net energy (NE) associated with live-weight loss and with live-weight gain showed a slight though non-significant difference between the two, despite evidence of a higher concentration of fat associated with gain than with loss, and CP concentration being the same in both cases. The mean value was 19·3 MJ/kg live-weight change.

The objective of this study was to test whether the use of tannin-rich shrub legume forage is advantageous for methane mitigation and metabolic protein supply at unchanged energy supply when supplemented in combination with tannin-free legumes to sheep. In a 6 × 6 Latin-square design, foliage of two tannin-rich shrub legume species (Calliandra calothyrsus and Flemingia macrophylla) were used to replace either 1/3 or 2/3, respectively, of a herbaceous high-quality legume (Vigna unguiculata) in a diet composed of the tropical grass Brachiaria brizantha and Vigna in a ratio of 0.55 : 0.45. A Brachiaria-only diet served as the negative control. Each experimental period lasted for 28 days, with week 3 serving for balance measurement and data collection inclusive of a 2-day stay of the sheep in open-circuit respiration chambers for measurement of gaseous exchange. While Vigna supplementation improved protein and energy utilisation, the response to the partial replacement with tannin-rich legumes was less clear. The apparent total tract digestibilities of organic matter, NDF and ADF were reduced when the tannin-rich plants partially replaced Vigna, and the dose–response relationships were mainly linear. The tannin-rich plants caused the expected redistribution of more faecal N in relation to urinary N. While Flemingia addition still led to a net body N retention, even when fed at the higher proportion, adding higher amounts of Calliandra resulted in body protein mobilisation in the growing lambs. With respect to energy, supplementation of Vigna alone improved utilisation, while this effect was absent when a tannin-rich plant was added. The inclusion of the tannin-rich plants reduced methane emission per day and per unit of feed and energy intake by up to 24% relative to the Vigna-only-supplemented diet, but this seems to have been mostly the result of a reduced organic matter and fibre digestion. In conclusion, Calliandra seems less apt as protein supplement for ruminants while Flemingia could partially replace a high-quality legume in tropical livestock systems. However, methane mitigation would be small due to associated reductions in N and energy retention.

1. Some criticisms of the classical approach to constructing a selection index are advanced. This approach (the economic model) is contrasted with an alternative one (the biological model) which is derived from the concept of the biological efficiency of production of lean tissues. The selection objective which is proposed from the biological model is the improvement of lean tissue feed conversion. The most important single means of achieving this is increasing the lean tissue growth rate.

2. The approaches were compared in three studies: (a) the effects of errors in economic and genetic parameters of the economic index; (b) phenotypic relationships between biological objectives and other measures of performance; (c) a theoretical model based on the utilization of metabolizable energy.

3. In a fixed situation the results were similar for both models, but the main advantage of the biological model is that it gives good indications of what happens, and what selection policies should be, in different situations. In addition, lean tissue feed conversion and lean tissue growth rate are closely related to concepts widely applied in biology, and their use as selection objectives should be helpful in enabling workers in many disciplines to make use of each other's knowledge.

The effects of three fat supplements on milk yield and composition were measured using 12 mid-lactation in-calf Hoistein-Friesian cows in a balanced incomplete change-over design over three periods each of 3 weeks. All cows received a basal diet consisting of 36 kg/day grass silage (dry matter (DM) 270 g/kg, metabolizable energy (ME) 11·6 MJ/kg DM) and 7 kg/day o f a concentrate mixture containing (g/kg) rolled barley (501), molassed sugar-beet pulp shreds (277), soya-bean meal (208) and a standard cow mineral supplement (14). Treatments were CON (control-no supplement); LIN and FISH (250 gl day of either linseed oil or marine oil, providing approximately 0·046 of ME intake) or TOA (95 glday of tuna orbital oil, providing 0·018 of total ME intake).

There were no significant effects on silage DM intake or milk yield (means 9·25 and 17·2 kg/day respectively). The FISH and TOA treatments depressed (F < 0·05) milk fat concentration (45·4, 44·6, 34·5 and 41·6 (s.e.d. 1·08) g/kg for CON, LIN, FISH and TOA respectively; note — the same treatment order is used for all results quoted). Compared with values for CON, yield of f at (glday) was significantly (F < 0·05) greater for LIN and significantly lower for FISH (739, 808, 572 and 732, s.e.d. 28·7). All three oil supplements reduced (F < 0·05) milk protein content (33·6, 32·5, 30·6 and 32·4 (s.e.d. 0·43) g/kg) but, apart from a small increase for LIN, protein yield (glday) was unaffected (545, 586, 510 and 574, s.e.d. 20·2).

The concentrations (g/100 g) of short-chain fatty acids (< C14) and C16 : 0 in milk f at were lower (F < 0·05) for LIN than for the other treatments. All supplements increased the concentrations ofC18:1 (F < 0·05), the value for LIN being greater (F < 0·05) than for the other treatments (21·0, 27·2, 25·3 and 23·7, s.e.d. 0·74). The FISH and TOA treatments increased (F < 0·05) the concentrations of long chain (< C2O) (n-3) poly-unsaturated fatty acids (PUFA), (0·19, 0·17, 0·49 and 0·27, s.e.d. 0·026) but less than proportionately 0·03 of dietary intake of these acids was transferred to milk, probably because they were found to be mostly in the phospholipid and cholesterol ester fractions of plasma. The FISH and TOA treatments increased (F < 0·05) the percentages of total trans fatty acids in milk fat (1·13, 2·19, 10·26 and 3·62, s.e.d. 0·728) whilst a significant (F < 0·05) increase in conjugated linoleic acid (CLA) was observed only for FISH (0·16, 0·28, 1·55, and 0·52, s.e.d. 0·154). Concentrations of CLA and total trans acids in milk were highly correlated (r = 0·91, no. =36, F < 0·001) whilst trans acids in milk were inversely correlated with milk fat content (r = -0·63, no. = 36, F < 0·001) supporting the theory that milk fat depression may be caused by increased supply of trans fatty acids to the mammary gland. The health implications of these changes in milk fat composition are discussed.

Recent publications indicate that the prevalence of perinatal mortality has increased in some dairy industries and an increased proportion of this loss is not associated with the traditional risk factors for perinatal mortality. The objectives of this study were to establish the prevalence of perinatal mortality (calf death within 24 h of calving) in Irish dairy herds and to determine the current significance of putative risk factors in pasture-based management systems. A total of 182 026 records of full-term calvings from Holstein-Friesian dams served by artificial insemination (AI) sires of seven breeds in herds of 20 calvings or more per year were available from the Irish national breeding database over 4 years (2002 to 2005). The prevalence of perinatal mortality was 4.29% (7.7% in primiparae and 3.5% in pluriparae). The likelihood of perinatal mortality increased between 2002 and 2005 and was greatest in June and in winter. There was an interaction (P < 0.001) between the effect of calving assistance and parity with the effect of dystocia on perinatal mortality being greater in primiparae. The odds of perinatal mortality were greater in male (OR = 1.12; P < 0.001) and in twin calves (OR = 5.70-13.36; P < 0.001) and in dams that had perinatal mortality at the previous calving (OR = 4.21; P < 0.001). The logit of the probability of perinatal mortality increased by 0.099 per unit increase in sire predicted transmitting ability (PTA) for direct perinatal mortality. The probability of perinatal mortality increased at an increasing rate in primiparae as animals calved at a younger age relative to the median age at first calving. The only herd-level factor examined, herd size did not affect the odds of perinatal mortality. These data indicate that the prevalence of perinatal mortality in this cattle population is similar to that in other pasture-based dairy systems worldwide. The putative exposures and attributes traditionally associated with perinatal mortality were associated with perinatal mortality in this pasture-based dairy cow population. The practical implication of these results is that as many of the significant risk factors are largely not under management control (year of calving, month of calving, twin calving, primiparity, previous perinatal mortality and foetal gender), herd owners must focus on the significant determinants under their control (age at first calving, sire genetic merit for direct perinatal mortality and both the extent of calving supervision and the degree of assistance), in order to reduce the prevalence of perinatal mortality and improve perinatal welfare.
